Highlight - Volunteers

We are very lucky to have so many wonderful volunteers at the market each week. Today we are highlighting, Lisa White, one of our awesome volunteers. We asked her a few simple questions.

RICOTTA DUMPLINGS WITH KALE PESTO

Each week we choose a recipe from www.acouplecooks.com to include in our weekly newsletter. We thought we'd share some of their delicious recipes with you on our blog since most of their ingredients can be found at the market.

Today we chose Ricotta Dumplings with Kale Pesto. Why? Because it's seasonal and simple, yet with enough kitchen time to make for an activity to spend time with a loved one (or two or three).

Highlight of the Week

Each week we focus on either a vendor, sponsor, or volunteer from the market to Highlight. This week we are highlighting Mandy Corry from Shacht Farm.



Before we were farmers we were customers with convictions and concerns about what we were eating and the impact those choices had. We wanted to be fully informed consumers and now, as farmers we believe that our customers do as well. It is for this reason that we make every effort to bridge the gap between our customers and their food by being transparent about how we care for our animals.

We raise free-range chickens for eggs and meat, free-range turkeys, pastured hogs and grassfed (and finished) cattle in south-central Indiana. Both the land and the animals are managed naturally, without the use of chemicals of any kind. Animals are raised outdoors in their natural environment where they are free to express their species-specific behaviors. We believe this makes for happy animals and ultimately, healthy customers.
